Here It Is!

I am so sorry that it has taken me so long to update our blog I have been really busy. We don't really have anything exciting going on in our lives right now. Tanner got a new toy. And no it is not another car. It is a computer. He is so happy to have his new computer that he hasn't got off it all day today. What's new. Anyways now the part that Tracy, Jill and Tenille have been waiting for the recipe for oatmeal cake. Drumroll please! Just kidding.

Ingredients
1c Uncooked quick oats
1 1/4 c boiling water
1c brown sugar
1c granulated sugar
2 eggs
1/2 tsp salt
1/2 c margarine
1 1/4 c All purpose flour
1 tsp baking soda
1 tsp cinnamon

Icing
1 small can condensed milk
1/2 c sugar
1 c pecans
1/2 tsp vanilla
1/2 c margarine
1 c flaked coconut

Directions
Mix oats, boiling water and margarine and let stand for 20 minutes. Mix the remaining ingredients together. Add to the oatmeal mixture and beat well. Bake at 350 degrees for 35 minutes. Use a 13 by 9 by 2 pan.

Icing Directions
Mix milk, sugar, margarine and coconut in small saucepan. Boil 3-5 minutes. Remove from heat and stir in vanilla and pecans. Spread on cake. Put under the broiler and brown. Watch carefully as this icing burns easily.

I have heard about this cake from EVERYONE! It sounds really good and since I am going to the grocery store tomorrow, I will have to pick up the stuff for it. Thanks for posting something yummy for my tummy!

Chelsey: Thank you for posting the recipe. It was a fabulous cake - especially since it was still warm when we were eating it at Tenille's house. I heard that you got to babysit Elizabeth - way to go!
